Our goal here is to list recipes that will be easy to make and healthy for people who have difficulty in the kitchen due to their disabilities. I have found that working in a hot kitchen tends to make my symptoms worse and standing a long time to prep the meal can also make you more fatigued. I got together with a good friend of mine "Julie" who also has MS and she had quite a few recipes that were easy and healthy that she uses quite often. I hope these help you in your daily living. If you have any easy to make recipes that are not listed here on this site please feel free to email them to management@klearview.co.uk and we will be happy to place them on the site. Adding more fiber to your diet helps all of us. Ways to add more fiber into your day:
1. Eat whole grain cereals.
2. Snack on fresh or dried fruits. (whenever possible eating the the skins is where you will find the most fiber.
3. Eating vegetables raw, or steaming them is also quite helpful.
4. Substitute brown rice for white. (with just that switch you will triple the fiber.)
5. Simply adding beans to soups or stews can easily be done and not noticed much.
6. Replacing any meat in dishes a couple times a week, such as bean burritos, or red beans and rice, is simple and easy.
